Our altitude is over one mile above sea level, making us one of the highest vineyards in the world. Spring frosts—and associated crop loss—are a natural result of our location, but benefits from this stress include unique flavor concentration in our grapes.

In Italy, Modena is the city most famous for making classic balsamic from its earliest days. It has atmospheric humidity ranging at or above 60%. Our humidity in Monticello, New Mexico is often in the single digits, yielding greater viscosity for the relative age of our balsamic.

Our aridity along with our high altitude are among critically unique environmental characteristics, which we believe enhances all we produce.
